Some days, my feet hit the ground running and there is hardly anytime to stop and use the bathroom, let alone fuel my body with healthy food options. This particular day started at 5:07 AM, and by the time my kids were up and getting ready for school, I had changed out three loads of laundry, did my 30-minute workout, had a cup of coffee, banana and ½ teaspoon of peanut butter as I rushed out the door to get our 2-year old to school on time.
Can you relate? My late morning didn’t ease up and around 1:30 PM, I was starving with a ton of work to get done before collecting 3 kids from 3 PM carpool. I needed a quick, simple and healthy snack option, so I went to the fridge and found some of my favorite go-to snacks: Oikos yogurt, sliced chicken breast, Swiss cheese and Triscuit crackers.
